VERYSTORMY Posted December 26, 2014 Share Posted December 26, 2014 Ended up doing a UK style christmas dinner Salmon roulade for starters Roast turkey that had been brined in aromatics My own recipe sage stuffing with sausage meat and port Roast sprouts with chestnuts and shallots Pigs in blankets parsnip puree roast potatoes in duck fat. A special Christmas gravy. Also a roast ham in Orange glaze rhen a berry and passion fruit pavlova (near disaster when I realised we didn't have eggs- thank good for petrol stations that sell essentials) now, given we are a family of two with a chihuahua there are left overs to feed an army. In the end, plans changed, and I went to Bondi Beach for Xmas Day, first time in my (Australian) life, and the Hard Rock Cafe at Darling Harbour for dinner, followed by coffee in Star Casino. Hi Tink i used a Nigella one here http://www.nigella.com/recipes/view/spiced-and-superjuicy-roast-turkey it looks a bit daunting at first, but actually only takes about 10 mins to put together. Makes a huge difference as turkey has a much better taste. - I find it can often be a bit bland. And helps keep it moist and reduces the cooking time. So, overall it is quicker to brine than not to. Then turkey and ham and roast sweet potato, potato, green beans and carrots with gravy. Then after a rest we had Eton mess for dessert. We all went for a walk and came back and had choc brownies and icecream. Phwaw- fat fat fat. Just got back from a BBQ today- even more fat. Except this time it was in a hall at grannies retirement village so gramps could have a kip at home during the day as he needed it. 35 people in all. Ham, turkey, chicken, prawns, pork (and crackle). Coleslaw, pasta salad, green salad, roast veg salad, Garlic bread, Pavlova, Christmas pudd, rum balls, rocky road, pancakes, shortbread, ice cream cake, chocolate mud cake. eating prawn salad tonight, tomorrow will be ham..... and there is still enough salad to feed a mob of brumbies. should be down to just garlic bread (and salad) by Sunday. a visit from Santa for the kid presents, a Kris Kringle (with stealing allowed) that almost came to blows over a very large glass jar of choccies, cricket in the sun, lots of very cold drinks, and very good company. as usual, a fantastic day. Last Xmas I had an excellent Lebanese meal in Punchbowl at Jasmine with c coffee and cake nearby BUT neither of these meals are a 'proper' Xmas dinner?! So I have to organise things better in 2015! Bubble and squeak for me today,normally throw any left over food tbh,but tend to feel a bit guilty/wasteful with whats going on in the world now,so a first for me today,too much left over to bin,so bubble and lamb it is! Our daughter is particularly fond of informal dining so just did finger foods with Chinese duck, pancakes and hoisin sauce (her favourite). Went out for a long walk on a lovely sunny day yesterday.
