  1. Yeah I know cabbies. Why not day school and run the cab at night. They always need car mechanics here, but it would be a massive cut in wage for him. You really want to think about this. I wonder if my wife has been to one of your classes? Do you have a shop where you do the classes as well? OK of your teaching this, it is different to what I thought you were doing (sorry). You are a pastry chef. You can prove this by the years worked in the industry. You do not have to have qualifications, work experience would be enough. Now if you want to get the qualifications, call the local college and ask to speak to the head tutor and explain what you want to do. Tell them that you are running a business that teaches people how to cook and you just want the qualifications. Just ask to sit the exam. maybe join the class and buy the books so you can pass easily. Now here is the challenge to you. Go home and bake some bread, then croissants, chelsea buns, plum bread and so on. Make a baked cheese cake. make a variety of desserts and ice creams and sorbets. Make a soufflé make buiscuits and tuiles and cookies. You can see what I am saying here. There is a lot to being a pastry chef. make sure if you get here you can get a job as a pastry chef and do it well.
  2. Are there qualifications available in floristry? If you have been in the business for years, go take a night course and get your qualifications. You know how much your husband earns, now when the chips are down he works more and when things are good he has a day off now and then right. What would he do in Australia? He won't be a cab driver will he. There is no knowledge to pass here in Australia. All cabs are rented from the firm, you never see a happy cab driver. Look at his yearly income now and you will have to times it by 2.5 to give a similar salary in Australia. So if he earns £40,000 a year, he would need to earn $100,000 to have the same lifestyle. I'm guessing that creative accounting if he is working for someone else will not happen like he does for his earnings as a cabbie. Just ask him how much he spends on bacon buttys and cups of tea a week and imagine that coming out of a weekly wage. I'm guessing that your cake decorating is a hobby? Your not doing it in a professional environment? Again there are cookery classes to take. But baking at home is hell of a lot different to doing it for a living in a professional environment. Yes there is sunshine here. So today I am hiding from it! shades are down, air conditioning is on. It's hot outside, cannot take the dog for a long walk, as I feel over heated when I come back. The dog cannot have long walks as his feet blister from the heat and he over heats as well. Your hiding from the winter in England and you hide from the summer here in Australia.
  3. We did the pet air thing. our 30kg Aussiedoodle. I don't remember the cost. But we looked at doing it ourselves and at the cost from pet air. Now pet air cost more, but it gave us piece of mind. The knowledge that if any mistakes happened they could be fixed easily by the company. Having organised the trip from Canada to England by ourselves and all the hastles that come with it, we opted for pet air and were happy with the service from England to Australia. Look at their website and get a quote, all you have to do is measure and weigh your dog.
  4. Sharks only cause five deaths a year. Kangaroos hit 6000 cars a year and cause 22 deaths a year. why not kill all the roos? 291 people drowned in Australia in 2013. maybe the water is the problem and not the sharks! Why not ban swimming? I think they should leave the sharks alone. They were there first. If you kill it, you should eat it, not just dump it's body at sea.
  5. Surely what people do in their spare time bears no relevance to their working hours. Obviously being under the influence or hung over does have an impact. But having fun on your time off and cutting loose a little, has no relevance on your working ability.
  6. Yes cooking for Google would be what I would want to do, Yahoo or Amazon. A decent company that subsidises the food so it's staff can eat cheaply and healthily. Were you expecting chicken schnitzel and chips? Instead you got fresh food, a choice of salads and fresh desserts. Nothing fancy, just good healthy food that you would want to eat.
  7. If you have a favourite jacket bring those, if you buy those expensive jackets bring them. You can take your knives through your checked luggage. If they do decide to search your bags please warn the staff member doing the search and offer to take them out for them so they do not cut themselves. Chefs knives are fine through customs, swords and decorative knives are what cause problems.
  8. Just to give you an idea of what I cook, tonight's dinner is... Seared chicken breast with a butternut squash risotto, baby spinach, rocket and parmesan salad with balsamic dressing. My wife wants me to go to work so I am not so bored, but she is more than happy when she gets home from work and dinner is ready for her. Tomorrow is sweet and sour pork, fried rice. I'm going to have a go at making BBQ steam buns as a little bonus, my wife likes them.
  9. When we were looking to come to Australia there were loads of apprentice/trainee welder positions advertised. All these jobs have disappeared now. I'd even be willing to work in the mines if a welder job came up there. So I suppose I will end up cooking again... I'm a good chef, I did it for 15 years and worked in some really nice restaurants in London. I cook good food, I don't know how to use a microwave and I make all my sauces from scratch, so I don't know how to make Bisto either. I don't know where to find catering jobs in Sydney? I have looked on Seek.com and Gumtree as well. I have had interviews in pubs but couldn't bring myself to use knoor stocks and cook schnitzel all day. Are there jobs in contract catering in Sydney? If so where do I find them? One of my last jobs in catering was cooking food for a well known retailer, I worked in their office canteen. They loved me, everything was fresh and healthy, they had variety in their food, it was tasty. I would have theme days and I made sure everything was within budget. They went from 40% of their staff eating in the canteen to 95% eating there every day. But I cannot find anything like that advertised here in Sydney. Where should I be looking?
  10. So what is the employer liable for if they let you go on a 457? Do they just buy you a ticket to England and that is it? Or do they have to ship our things back as well? What about the dog? We are just wondering what will happen if the worst happens? Is there a government website to look at, that would put our minds at rest?
  11. Mrs. Pob has hurt her foot, she trod on a tent peg. (she was hopping mad!!!!!) So spending hours on her feet this evening is not going too be an option. Is there anywhere we can go that gets a good view of the fireworks, but doesn't involve lots of standing or walking? Maybe a car park over looking the fireworks?

    TV in Aus

We have Netflix. we can watch series from the US and it has loads of movies and it is only $7.99 a month. No adverts!!! Great stuff.

    Bacon

Tried it. It is one of the better ones, but it has a sharp aftertaste and a slight lime cordial taste as well. Not for me. I really enjoy white beer and Belgian beers. A standard bottle of Leffe is $19 and I cannot find any decent white beer here, I like Edleweiss and Paulander. I would even drink Blue Moon as well, but never enjoyed a Hoegarden that much.

As for the beer I brought loads of beer and got my wife to open them and did a blind tasting. I do enjoy a drink, but find myself drinking beer that has a substandard taste or buying beer and it costing $19 a bottle and feeling guilty at drinking such an expensive beer. So I gave up beer. Even in America you can get a decent beer in the supermarket.
  15. What is sad is the fact the kids probably don't think they have gone to heaven, they probably think they have gone to hell. Taken away from everything that they know and the people that they know and love (all be it too closely). If you have no conception of a soft bed and a toilet, imagine what going to the dentist is like? Who is this man torturing me and drilling into my mouth? The kids are probably terrified!

Yes both markets are good value, but I just couldn't wake up that early to go to the fish market! But the drawers filled with live eels really are a sight to see. But if you see the smoked eel when you are there grab some, delicious!

    Bacon

When I lived in Buckinghamshire I would drive into London and go to the meat market for all our meat, not only was it cheaper but the quality was better too. I would buy 20lb that's about 9 or 10 kilo's of smoked back bacon at a time. I would also buy other meats, similar amount of beef mince. I would spend over £100 each visit! 5lb of back bacon was only £9! Better quality and price than what you could find in any supermarket.

    Bacon

The bacon is bland here, it lacks the bacony flavour! I miss the saltyness, the smell, the taste. It's all down to the curing process. You only add a small amount in the curing process and to be honest you will consume equally bad chemicals in many processed foods, just look at sausages and potato chips. I also make a cracking bresola and saltpetre is the key to this. You can also add turkey to a brine and make turkey bacon, I'm told this is a healthy alternative to pork.

    Bacon

Basic ingredients are water, pork, salt, saltpetre and what ever herbs and spices you choose. Apparently you just soak the pork for between 24 and 48 hours in the brine and drain for 24 hours and you have bacon. The importance of the saltpetre adds colour, firmness and tenderness to the meat, it is a common additive to cured meats like bacon, jerky and sausages.

So the only food items I really miss is bacon and beer. To be honest I have given up beer. But I miss bacon, I have looked for it and other cured ham products and have been left disappointed with what is on offer. So I am going to have to make my own, after a bit of research I am left lacking one ingredient Potassium nitrate (KNO3), or saltpetre as it is also known. I have asked butchers, apparently they only buy stuff in and open the box and sell it. I know there will be somewhere that sells this stuff, but I just don't know where. So I just need 50-100g of food grade potassium nitrate, where can I get this in Sydney?
  21. Why is it even a question? Why would you treat gay people any different? Are we living in a progressive country? Most people would like to think so, but even having to ask the question about gay marriage answers the above question.
  22. Just throwing the parents out into the street would be a bad idea and will only add stress to the situation. But he shouldn't have let them back in after the first time. A mans place is by his wife and a wife's place is by her Husband not mummy and daddy. The Original poster needs to get back to how he was when he first married the woman and not how he is now. He has been taken for a ride by these people and they will stay on the merry go round till it stops spinning. The situation I can only guess is exaberated by having the parents in the house. They need to leave and find their own place so that the grown ups can have some space. If they have not got the money to move out maybe the parents should go back to England? The guy needs some space. Many people work odd hours I'm sure something can be worked out. Either by a part time nanny or the wife could help with child care.
  23. This is the fourth time the outlaws have lived with you. What you didn't learn the first time? Or the second? Or the third? If the house is in your name and it has come to such a horrible place. It is time for them to leave. The kids can stay with you in the house, they will be well cared for won't they. The rest can go get their own house or go back to England. You are being used mate and made to feel lousy at that. If they want the house they can buy it from you. Tell them that as the owner of the house that you are putting it up for auction and they are more than welcome to bid on it if they want to stay. Tell the wife how lucky she will be to receive 50% of the house money after you have paid off the mortgage. Which is fair. It's your house do with it what you want. Oh and now is the time to open up your own bank account as well, stop getting your wage paid into the joint account and maybe take half the money out and put it in a plastic bag under the spare wheel of your car.
  24. Yes you can do this. Sometimes it is cheaper than buying a direct ticket. You can buy round the world ticket and only take it to Australia and miss out the last bit of going back to America. No problems. Don't forget that flying around the USA is really cheap but will add to the cost of your round the world ticket considerably. So fly around America on your own tickets and then work out where you want to depart the States and buy your ticket from there. But ask your local travel agent first as your in America and it may well be different for you.
