Nobody knows for sure. It is all about luck, priority on occupation, etc. There are people who got nomination approve ages ago and still waiting for visa application to be granted. There are people who within 3-6 months of their nomination application being submitted got approved. So it is really unpredictable. Check the Global Processing time so you can have an idea.

Then yesterday she uploaded a few other docs, and clicked that all docs had been submitted and then the date changed.
You can check - just go to 'attach documents> expand all --- then you can see all files and date uploaded for your application.
Same with us. Our agent uploaded our Police Checks and did not change the "last update date". I wouldn't stress about it.

I've worked so many extra hours for disgusting money hungry bastards, I started my job with all the passion and the experience I have and now waiting for my visa to be approved and in those days I became to strongly belive that I'm not going to have a positive outcome at the end of this story for many reasons, lets clarify them:
1 I work for dodgy people
2 Is a shit business and only people on visa and miserables are working there, in fact they abused of sponsorship because is the only way for them to find workers ( god is great, government changed the rules isn't like that anymore) since then no more new cooks/chefs
3 With me, 3 other cooks waiting long time for pr
4 Visas can be refused for different reasons, so even if you are a good,lived in Australia for many years, did everything correctly sure not a criminal ecx they have the power to rejected you because of business nominations for example
5 Cook is not on the long term list, and so far I only seen cook application rejected, not approved
6 Is unbelievably unfair the waiting time, a total joke.I'm suspicious that they don't look at ur application to take time and advantage the business before they rejecting
Would I do the same again?
Absolutely not, but I had a good lesson
So what to do when you know all this things?
I choose to do so, and I will go until the end

Low Risk counties according to MA´s are the ones listed to apply for ETA. All the other countries are High Risk, factors can be because it is more complicated for the Australian Government to access services/investigations with overseas dependencies to check the applicant. It is not because the citizens of those countries are "good boys/bad boys" or "overstay in Australia". I doubt somebody from Ecuador, Chile, Poland, etc for example has overstayed in Australia (I mean there could be situations, but what would be the percentage compared to those neighbour countries).
And why would it matter for visa purposes? Well..because it can be easier or harder for Immigration to have more info about the person applying for X visa.

I do know that is is listed on the SSL ocupation list, but wouldn't know if it falls as a "high risk occupation". Do not know what are the considerations for this.

So, we have submitted all requested information (nom: payslips summary, etc and visa app: Up to date home country police check). Now let's wait how long it will take to process. As mentioned on past posts, the requested was made on 29 Dec 18; company submitted their paperwork on the 9th Jan and we submitted our paperwork yesterday.
Status: Initial Assessment , let's see if the status changes or remains the same

Not necessarily. Mine (for example) is also showing 'Initial assessment', and nomination is still pending. It might mean you've been assigned a case officer and they are checking on documentations provided and/or requesting for more info; like in your case.
Why don't you ask your company (or whoever is dealing with your visa) if the nomination has been approved.

Requirements for applying for Police Clearance Certificate (PCC) from outside the country
- Clear copies of relevant pages of applicant's current passport and old passport that was used while in Qatar with personal particulars, residence permit, dates of first entry to the country and last exit from the country.
- Full set of fingerprints (original) duly attested by a competent government authority at the country of the applicant.
- Three recent passport-size photographs
- Original of Good Conduct Certificate (No criminal record / conviction certificate) from the local police authority from the country of applicant duly attested by a competent government authority.
- Letter explaining the purpose for which the certificate is required.
- US$ 10 (Ten US Dollars) in Cash as processing fee
Notes:- If the applicant (male) is a Qatari who didn’t pass the secondary school examination and less than 30 years old, should submit a No-objection certificate issued by the Qatari Armed Forces or by the Ministry of Interior if he is under 25 years old and didn’t work previously in the Ministry of Interior or Armed Forces to work in a government authority.
- If the applicant is a resident born in Doha doesn't have to attach the PCC from his country with the application for the PCC from Qatar. But he should attach a copy of the birth certificate with the application. Those who entered the country while they were under 16 years old should produce a copy of the passport that contains the date of first entry to the country.
- No objection letter from the sponsor + Copy of the ID card of the sponsor (For females)

That means that 75% of the cases finalised last month were processed in 11 months, 90% in 14 months and the remaining 10% in less or more than the times quoted. So just think you can hear from them before, during or after that waiting time.
