As far as I know knives are okay in hand luggage - it may depend on the length of the blade/type of knife - need to check the legality in Dubai & Australia. Be very careful regarding any medicines in Dubai as lots of medicines legal over the counter in the UK are illegal and can land you 5 years in prison. We had a terrible experience there. Would also advise to declare them on arrival at customs too, they just might want to check that they are not weapons as in martial arts type. make sure you throw away all fresh fruit and declare all food stuffs -anything that you put in your mouth - declare it, customs guys like you more and are a lot nicer to you if you declare and let them decide what is ok.
