For an example see http://www.wagenet.gov.au/WageNet/FactSheets/DataFiles/AwardSummaries/MetalsAW825130.pdf That award covers spray painters in the metal industry. 'Above award' pay means that they will pay above the rate in the award document. By law they are not allowed to pay you under it. I think that a lot of awards were scrapped for white collar workers with the introduction of individual employment contracts (perhaps someone else can confirm this?) but as I understand they are still active in the blue collar industries and at least used to be (if not still) negotiated between industry and the unions.
