I know somebody who is about to start up an outback tourism operation in western qld. They'll be looking for people/a person who is handy with animals, particularly horses, has good knowledge of and passion for the bush, preferably including station experience, and is happy to work with people. The work could include taking horse trail rides through the bush, and could extend to other activities including camel rides and working with other animals, possibly harness trained.
