"Cold" Xmas meal ideas

..................fruit kebabs are good for kids................and a chocolate dipping sauce....:biggrin:.......................and individual chrismas puds or christmas cupcakes go down well with the mums and dads................:yes:

I was wondering what to do for Xmas instead of Turkey. I wasn't keen on it in the UK so don't fancy it in the heat of summer.

 

Think I've decided on some kind of seafood platter: Prawns, Lobster (though any tips on how to prepare would be appreciated - have never tried it at home), smoked salmon and cream cheese and lots of yummy side dishes and salad. Topped off with a Trifle, and some Pimms.

 

I have the in laws coming and am slightly dreading it so guess I'll need to be careful not to undercook the shellfish eh. :eek::biggrin:

 

Kat, there are some specialised seafood outlets around, if you look in the yellow pages you can preorder it for xmas day and pick it up the day before - they will also tell you the best way to cook crayfish etc. I go to a place in Blackburn to get mine but that's a bit of a drive from you I think. There will be one down your way.

. Always stuck for dessert ideas as my awkward family all like different things but trifle is my fave, so might do a cheeseboard/fruit salad for everyone and then an individual trifle or xmas pud por moi!

I might try prawns this year, never prepared them before.

 

Any suggestions of some prawn recepies?

 

I find it best to keep it simple just some oil, herbs and lemon juice in a foil parcel, only takes a few miins on the barbie, you can marinade first in whatever you like, garlic, chilli...anything really. Simply delicious.

I would eat that but the others wouldnt, its lemon or choc cake for OH, anything goes for daughter and anything plain for my boy, not very adventurous!

We bought an electric spit roast for the barbie and do the Turkey outside. I put the tray with the roasties and chipolatas, stuffing, roasting veggies etc in a tray below the spit roasting turkey, close the lid and enjoy your day! For me Christmas wouldn't be Christmas with out the full works. We don't eat til about 4pm tho....jsut too hot to even eat it earlier!!!:cool:

 

we are the same ..........we have been invited to xmas cold dinners at homes and the beach but tbh we love the family tradition of opening presents in the morning ,a late breakfast , complete chaos and lots of fun inside and out ......and with 5 children thats what it is on Christmas Day , after all its for the children ,one special day for all of them to look forward to and enjoy ........then like you i cook the dinner and we eat around 4 or 5 ..........as for cold meal ideas ........do you like cold curry .............

Our first Christmas here I did a whole salmon (wrapped in water soaked newspaper, stuffed with herbs and lemon slices then baked) along with a big selection of salads, cold cuts, etc. etc.

 

It was delicious and I recommend it...but to us it didn't feel like Christmas so, since then, we just crank up the air conditioner for that one day and eat the whole Christmas turkey meal.

 

The good thing is that the ham, turkey, stuffing etc. are great cold with salads for a few days afterwards so one afternoon of cooking gives us a bunch of hot weather meals.

Woolworths do a range of fresh chilled Herbs in salad/fridge section .. one of the ready mixed ones is called * thai * its in a sqeezy tube this is brilliant with Prawns just pop the sauce in a Frying pan/ wok and stir fry , Yummy alone or with or without stir fry veggies .. its yummy and sooo quick .. nice little starter !

I was told (by an Aussie) that most Aussies do the turkey dinner thing so is it just us newly arrived poms that think we ought to make it a casual affair?

I must admit Landv that I never really 'liked' Xmas in OZ, did it and got on with it, beach, house etc, but never real the same 'feel'.

 

One year me and some friends broke into the Coles frozen food depository, along with several 'bottles' and xmas decorations.

 

However, we forgot that the Coles freezer food depository was closed for five days over the christmas period.

 

We got so cold we couldn't find our way out unfortunately.

 

'Dippy' lost a leg, 'Skanger' lost several digits through severe frostbite, 'Moony' went mad and tried to eat his own testicles (frozen) and at one time 'Wheaty' went outside of the main cold store saying, 'I am just going outside and may be some time.':shocked::no:

 

However his heroism was short lived, as when we finally made our escape we found him on Bondi beach 'sunning' himself with a sly grin on his face, barsteward.:mad:

I thread mine on to skewers to make kebabs, marinate in garlic,chilli and olive oil and just cook for a few minutes on the barbie. Lovely with some crusty bread and aioli.

I've heard similar from some aussie friends. I think with me its more a way to combat homesickness by doing something completely different and not trying to recreate Christmas in the UK...
