As a chef I only buy bacon from certain butchers who I know , bacon from supermarkets is very inconsistant, British bacon is mostly imported these days but can be superb if you are willing to pay a bit extra....shouls imagine the butchers in Oz produce bacon just as good as pigs are pigs....do not buy from supermarkets I am trying to say... I would be surprised if you could buy imported bacon in Australia. Cook 3 slices of bacon in lard till crisp and no white is showing on rind. Remove bacon onto one slice of a crispy fresh cottage loaf (genorous cut) Dip other slice into pork and bacon fat and fry for 30 seconds. No sauce for me thanks I like to taste bacon..... To each their own, but the "standard" UK bacon was so disgusting--pumped full of salt water that leeched out when you tried to fry it--that I pretty much stopped eating it except when I could afford ultra-expensive dry cure stuff from a butcher. Down here, even the standard super market stuff fries beautifully, leaves some dripping in the pan you can use to fry other things and tastes wonderful. I'm back on bacon butties again, much to my waistline's regret. So, everyone is entitled to their own opinion but, to those arriving in Aus, I suggest you try the local stuff. I think you'll be pleasantly surprised. Bob I agree! I never really liked bacon in the UK, it was a bit tasteless and watery for my tastes, but here it is lovely. It actually tastes of bacon and, although I don't fry it, it grills really nicely. English bacon is kind of insipid, but Aussie bacon is meaty and scrummy! Due to cut backs they now do bacon butties without the bacon.... It seems they wipe the bacon accross the sandwich giving it a taste of bacon.
