Hey, I took my phil and teds pram over. They had no problem with it. They let me take it to the gate in Dublin. They then put it into a clear heavy duty plastic bag. Which protected it great. In Dubai the have free ma claren stroller's so its one less this to worry about.
With regards to car seat, I didn't take one, as the regulations are diff over here. My advise would be to sell yours and buy a new one over here.
O and one more thing if you are struggling to make the weight of your bags, an post do a great deal. 20KG box of any size for €60. I've had a few boxes sent over this way and they are normally no more then a week door to door.
For the flight with little ones - it really isnt as bad as you think. The time goes really quick. I brought little presants- sticker books-card making kit- snap cards- jig saw etc. and also treats, ( try to hold off on them as long as you can so you have enough to do you on your second flight. Things like raisins of foods that take that bit longer to eat are great to pass a bit of time. I didnt give her anything untill she started to get ancy, which was a good 2-3 hours once we got onboard. After that it was Tea time, then a movie then a snack and then we were landing. I keep her awake inbetween flights, let her run around a bit found a nice seat with a good where she could play and colour in, and then took here for something to eat. (I had a 5 Hour stop over) if you have a two hour stop over it will go so quick.
For the second flight, we were both tired by this stage, we got on-board took off and as soon as we were up in the air I got her seat comfortable and took her blanket out and off she went, for about 6 and a half hours. By the time she woke up there was only a few hours left on the flight and it was dinner time again. lol Im not going to lie, the last few hours for me went sooo slow, but my daughter was really as good as gold. She made a few cards, etc and by the time we went and got freshened up it was time to land..
So that was my trip, hope this helps.
Safe trip over all.
