Can you still get PR to Australia after 2 years studying fulltime?
is this possible?
If so I am considering doing a course, ie. business diploma, hairdressing ect...

Only if you plan very carefully in terms of what qualification you do.
There's plenty of information at http://www.immi.gov.au/students/ and it'd be worth spending the time going through it.

I am just looking at getting over there ASAP.

You can get over here as soon as you've been accepted on a course, paid your fees and got your student visa. Whether or not there is a clear path to PR from there is another matter.
If it's a question of expediency, what about a WHV?
