Any advice from people who know what a fitter is and does or any other jobs which would fit his experience would be much appreciated just feels impossible at the minute and so annoying because all his sorts of jobs he has done are on the modl but he hasn't got 1 lot of experience or quals he can use.

There are many sub-groups to the job "Fitter" and they are (or were?) more or less equally grouped or recognised in the UK.
Fitter-turner
Maintenance fitter or machnie tool fitter
Toolroom fitter
to name just a few.
They all use hand tools as well as machine tools to make or repair machinery, plant and equipment.
Its still the case in Australia that you have to do a four year apprenticeship to qualify as a skilled fitter. In the UK there is (or was) the semi-skilled fitter classification. This class of fitter doesn't seem to exist here in Australia... I haven't heard reference to it here but there might be regions or states which do?
The difference between semi-skilled and skilled fitter for all practical purposes is that a fully skilled fitter should be able to make or repair a whole range of equipment and not just one specific type. In practice it depends on individual competencies of course.

The trade appraisal part of migration seems to be complex and its probably a good idea to spend some money on a reputable migrancy agent if you think that you're not in a clear cut situation.
Good Luck
