My own knowledge of the details of these visas is confined to Parent visas and tourist visas. I know very little about skilled visas.
The ENS visa and the RSMS visa both enable exceptions to be made on the ground of age and/or work experience if the visa-applicant is an exceptional candidate for employment. According to Welshtone, this is less difficult to prove if the skill is on the MODL.

I don't know what a Btec Certificate is? Is it a degree? Have you looked on Google Australia to see whether Norlands Nannies have a branch out in Oz? Or is there an equivalent organisation? A respected childcare organisation with clout in thir field would be the people most likelty to be able to get your aunt round the problems. It is not easy trying to get sponsorship, however, because a lot of employers don't want the hassle.
I think your aunt should not get her hopes up unduly but if she can find someone to sponsor her, she might be in with a chance. I think she would need an expert to handle the TRA and the visa application for her, though.
Let's not give up on the idea just yet, I would say.
