hiya - cant help you with brisbane but we are migrating on a 175 which is the skilled visa and my husband is a chef - the occupation is on the demand list. there are lots of websites you can look up i think careerone is one if my memory serves me correctly and they probably have a local newspaper which will advertise as well - this is the case for wa and sa (we are going to adelaide sa)
i am of the understanding that, as is with this country, they are always crying out for chefs - lets hope we can find some jobs that are well paid though!!!!
