I'm not living in Brisbane or NSW but I am a teacher living in Melbourne. You need to do your skills assessment through Teaching Australia, then apply for your visa. Each state requires you to be registered to teach and each state has different methods for employing teachers. I applied for registration with Victorian Institute of Teaching once my visa had been granted and I was still in the UK. I sent countless emails to VIT asking questions and they were always most helpful. Once I got here (and before) I could apply for jobs if I wanted to. I registered with a supply teaching agency before I left the UK which helped, when I got here I just had to sign a few forms and meet the managers of the agency and away I went. I have applied for permanent jobs but no luck yet.
My best advice to you is get the skills assessment done and the visa application underway and start researching the different teaching authorities for the states you would like to live in.
