We use to live in Brisbane and are returning in June 2008 and i have worked as a chef over the years in Oz.
I have freinds still in Oz who run a chefs recruitment agency and they say there is a huge shortage of chefs all over. But from chats with them they tell me the problems seem to be the pay chefs are offered.
The general working condition change from kitchen to kitchen. some have air con some don't.
I did some work for a chefs agency which i found worked best. You set up your own business, (quick, cheap and easy) and then they find you work as a chef for a few hours, or days or weeks, you bill the client and then pay the agency a commission for finding you the work. Its good cos you get paid for every hour you work, and the hourly rate is pretty good. You can do this until you find a job that you really like.
I did this contracting work for 5 years, its great cos you get different jobs, see different ways to do things. BUT sometimes you can get sent to a pretty crap kitchen cos the chef has just walked out and they have a big do on. But generally the jobs i got were good, nothing to taxing on the brain.
Cheffing in Oz is good, it just doesn't pay great.
