Hi Chesney,
Newcastle (the hunter region) is similar to the temps here on the central coast (we are about 45mins from Newcastle) the weather here is not as humid as Queensland & not as cold as melbourne during the winter. I really dont think that you will have a problem with the weather in NSW its a mix of hot days & not so hot days in the summer and not a constant heat of 40 plus everyday like Spain or Turkey can get.
Have a peek at Australia & World Weather Forecast, BoM Radar, Rainfall Map & Report and take a look at the temps past & present for the area you are aiming for.
